On your iPhone or iPad. It is included in your normal device backup, like most app data.
Set a budget for each envelope on the Monthly Budgets screen. When you change it, the new amount applies from the current month onward, and earlier months keep the budget they had.
Green means you are under 80% of the budget, amber means 80% up to the budget, and red means you went over.
On the Envelopes screen, swipe right on your income envelope and tap Income. Record income as positive amounts in that envelope. Monthly Budgets then shows income, spending and what is left over.
